Butternut squash

Here are all my butternut squash recipes, and what a wonderful vegetable it is!  It will stand almost any level of being bumped about when travelling, isn’t fussy about being kept in a fridge (though don’t expect it to stay fine forever in seriously hot weather), and on the plate it brings sunshine to the dreariest day.

But it is murderous to peel.  Surely that excludes it from a site of travelling recipes? Not with this tip, which transforms peeling the toughest-skinned butternut squash into the work of a moment.
